Turkey Confidential Updates for 2021

Turkey Confidential is The Splendid Table’s annual Thanksgiving show. Francis Lam takes pre-recorded calls and comes to the rescue of Thanksgiving cooks, kitchen helpers, and dinner guests during the biggest cooking day of the year.

As in 2020, the program for 2021 will be file based – the show will be fed “live” at noon ET, though files will be available 1-2 days prior to Thanksgiving Day if stations prefer to air earlier in the morning on November 25.

This annual Thanksgiving Day broadcast will include the following guests:

  • David Chang and Priya Krishna, authors of the new book Cook at Home: Or How I Learned to Stop Worrying About Recipes (And Love My Microwave),
  • Pati Jinich of PBS’s award -winning series Pati’s Mexican Table
  • Kenji Lopez Alt of Serious Eats and his latest book The Wok Recipes and Techniques
  • Baker Cheryl Day author of Cheryl Day’s Treasury of Southern Baking

“Turkey Confidential” serves up Thanksgiving support

The Splendid Table continues its annual Thanksgiving tradition with “Turkey Confidential” – two hours of live call-in support, turkey triage and culinary inspiration.

Hosted by Francis Lam, this year’s guest list includes Dorie GreenspanPati Jinich, and Samin Nosrat. They’ll share their favorite Thanksgiving dishes, memories and quick fixes, and help Francis answer listeners’ questions. Whether someone is looking to create the perfect cranberry relish or forgot to thaw the turkey, Francis and his guests will soothe frazzled nerves and entertain hosts and guests alike.

Francis will also be joined by phone by the inimitable Lynne Rossetto Kasper! She’ll share her Thanksgiving plans after years of celebrating the biggest cooking day of the year in the studio.

The Splendid Table Focuses on Filipino Food

This weekend, Francis Lam devotes the entire the hour to the food of the Philippines. He visits the home of chef King Phojanakong and his mother Emma, for a lesson in the delicious Filipino stew – Salmon Sinigang. Share their video with your audiences.

Listeners will also hear about the the unique influences on Filipino food from Amy Besa, author of the award-winning Memories of Philippine Kitchens, Filipino pantry staples from chef Chad Valencia of L.A.s’ Lasa, and a short list of where to eat great Filipino food across the U.S.

This weekend’s show is all about Mexican food in America, from tortillas to chilaquiles.

Francis Lam tastes and talks tortillas with  Jorge Gavira of Masienda. Jorge offers the last word on what makes great tortillas and shares the ultimate insider tip on how to correctly heat them.

Listeners will also visit The Mitla Café, a Cal –Mex landmark that is a pillar of the San Bernadino Chicano community –  and the inadvertent model for uber chain Taco Bell; get a flan-making lesson from Fany Gerson, chef-owner of La Newyorkina and author of Mexican Ice Cream; Tucker Shaw from Cook’s Country explains chilaquiles, the irresistible chile/chip dish, and chef Wesley Avila of  L.A.’ Guerilla Taco truck shares his distinctive thinking around the humble taco – think curried cauliflower tacos with dates…

Like the recent exploration of Filipino food and culture, The Splendid Table will devote this week’s show to a celebration of what has become an integral part of American food culture.
